First, explore menu planning, food truck layouts, permitting, financial realities, and hear what's possible in the Eug/Spfd area. You'll also hear from several food truck owners, and get to ask questions. During the second session, under the direction of Chef Clive Wantsall, prepare and serve various menu items for guests of the annual Downtown Campus Open House on Sep. 7.
